FDSC 469 - Meat Science

3 Credit Hours
The study of meat science and muscle biology. Topics will include animal/tissue growth and development and the relationship to meat quality. Meat processing, preservation, and meat safety concerns will also be considered. 

Contact Hour Distribution: 2 hours lecture, 2 hour lab
