AFST 115* - Southern Food Culture3 Credit Hours
This course will trace and examine the dynamic legacy of food culture past and present in the southern US, focusing on the social, historical, creative, economic, and geographic manifestations of the relationship between food culture, identity, and wellness.
Students will work to untangle and make transparent the legacies of place and power that are embedded in the way we think about southern food and narratives of authenticity, belonging, and race. Students will also connect to local food businesses, chefs, and non-profits who are shaping contemporary stories of food in our region and have hands-on experience with growing and cooking food.
