PLSC 122* - Community Gardens: Cultivating Food Equity and Abundance3 Credit Hours An introduction to local foodways in the United States through the lens of community gardens, school gardens, and related organizations in the Knoxville area. An overview of the history, current status of, and future goals for providing equal access to fresh, healthy produce. Topics include local cultivation practices, land access considerations, an examination of regional foodways and food waste, and related “food justice” issues.
